During summer 2023, Mourad from Bakkerij Louf (formerly "Loof") reached out to us, "Let’s do something fun together for the neighbourhood. Something casual, something good". At that time, the increasing lines at Chun Café made it difficult for locals to wait in queue. We felt this initiative would be a thoughtful gesture for the community.
After a few conversations and some back-and-forth brainstorming, Mourad and his team came up with matcha gelato on a warm croissant in a Danish style.
We thoughtfully paired the pastries with our signature matcha lattes and coffee. For the gelato, we collaborated with Miuz, Italian gelato experts. While we trusted their craftsmanship, we worked closely with them to develop the perfect matcha flavour.
Finding the right balance
Miuz makes exceptional gelato, but wasn’t just about selecting the right matcha, but achieving the right balance of bitterness, sweetness, and creaminess. Through a series of tasting sessions where we adjusted the matcha grade, sweetness, and intensity, we combined their gelato expertise with our matcha knowledge. The result was something we were all proud of: a matcha latte gelato that truly reflected what we’d serve in our café.
The idea behind the event was simple: something light, fun, and accessible for the neighbourhood. The croissant was everything you’d expect from Louf: warm, flaky, and buttery. On top, a cold, creamy scoop of matcha latte gelato brought contrast and balance. We served it with iced matcha lattes, and guests gathered on the benches outside. The vibe was really chill.
